Cheesy Garlic Zucchini Steaks are easy to prepare and offer a delightful blend of savory garlic and creamy cheese flavors.

Ingredients

  • 2 medium zucchini, fresh and firm
  • Kosher salt, to taste
  • 4 cloves garlic, finely chopped or grated
  • 1/4 tsp. crushed red pepper flakes
  • 4 Tbsp. extra-virgin olive oil, divided
  • 2 oz. mozzarella, shredded (about 1/2 cup)
  • 1 oz. Parmesan, finely shredded (about 1/2 cup)
  • 2 Tbsp. fresh basil, torn

Instructions

  1. Slice each zucchini in half lengthwise to create four ‘steaks.’
  2. Score the flesh side about 1/4 inch deep diagonally.
  3. Season the zucchinis with 1 teaspoon of salt and let them sit for 15 minutes.
  4. Preheat your oven to 425°F.
  5. Combine garlic, red pepper flakes, and 2 tablespoons of olive oil in a skillet over medium heat, cooking until fragrant.
  6. Scrape the garlic oil into a small bowl.
  7. Heat 1 tablespoon of olive oil in the same skillet over medium-high heat.
  8. Pat the zucchini dry with paper towels, then sear the flesh side down until golden brown, about 2 to 3 minutes.
  9. Transfer the zucchini to a baking sheet with the flesh side facing up.
  10. Brush the zucchini generously with the garlic oil mixture.
  11. Bake for 8 to 10 minutes.
  12. Top with mozzarella and Parmesan cheese, then broil until melted and golden brown, around 2 to 3 minutes.
  13. Garnish with torn basil and extra red pepper flakes before serving.
